Preserved Tomatoes
- Yellow pear-shaped tomatoes
- Sugar
- Lemons
Scald and peel the small yellow pear-shaped tomatoes, (they should not be too ripe) weigh them and add 2/3 of the amount of sugar, let stand with patience for several hours, then pour off the juice into a kettle and boil until a thick syrup. Add the tomatoes and a few lemons sliced thin, and boil until the tomatoes are transparent, then pour into glass jars and seal.
