Preserved Strawberries

  • 1 lb strawberries
  • 1 lb refined sugar
For every pound of fruit, weigh a pound of sugar. Put the strawberries with the sugar on the stove in a porcelain kettle. Bring to a boil slowly for about 20 mnutes. Take them out with a skimmer and fill the hot jars nearly full. Boil the juice a few minutes longer and fill up the jars. Seal them hot. Keep in a cool, dry place.
