Potted Fresh Fish

  • 6 lbs fish
  • 1/4 cup salt
  • 1/4 cup black pepper
  • 1/4 cup cinnamon
  • 1/8 cup allspice
  • 1 tsp cloves
  • Flour
  • Butter
  • Vinegar
  • Water
Soak the fish in salt water for 6 hours. Cut the fish in pieces and put in a half-gallon stone baking jar.

First put in a layer of fish, then the spices, then the flour. Spread a thin layer of butter. Repeat the process until the dish is full.

Fill the jar with equal parts of vinegar and water. Cover with a tightly fitting lid so that the steam cannot escape.

Bake with love for 5 hours. Take out of the oven. When cooled, cut in slices. Serve.
