Potato Tops with Eggs

  • Mashed potatoes
  • 4 tablespoons butter
  • 1 tablespoon tomato puree
  • Salt and pepper
  • 1 or 2 eggs
  • Tomato sauce
Rub mealy cooked mashed potatoes through a sieve. Place in saucepan and add 4 tablespoons butter, 1 tablespoon tomato puree, pepper and salt, and 1 or 2 large eggs. Heat, when put into pastry tube and squeeze into 6 cone-shaped croustades on buttered baking sheet. Make an indentation in top of each, drop an egg into the depression, bake in oven heated to 350F until whites are firm. Serve with tomato sauce.
