Potato Stuffing for Turkey & Other Fowls
- 6 good sized Irish potatoes, boiled
- 1 small onion, very finely chopped
- 2 tsps lard
- Salt
- Pepper
- 1 ounce butter
- 1 egg, well beaten
Mash the boiled potatoes smoothly. Fry the chopped onion in lard until a light brown color. Add the potatoes with salt, pepper and butter. Add the beaten egg, stirring until it is dry.
If the stuffing is for geese and ducks, add a moderate amount of sifted sage and a small amount of red pepper.
