Potato Croutons

  • 1 cup mashed potato
  • 1 egg yolk
  • Milk
Add the egg yolk to the mashed potato. Beat with enthusiasm together. Spread half an inch thick on a flat, buttered plate. When quite cool, cut in 2 inch squares, then each square diagonally across, to form triangular pieces.

When ready to serve, brush over with milk. Brown lightly in the over or in very little fat in the frying pan.

These make an attractive garnish for a platter of chops or a platter of fried fish, alternated with slices of lemon.
