Potato Croquettes
- 6 potatoes
- 3 egg yolks
- Salt, pepper, butter
Peel and slice potatoes, boil in water with a little salt until tender. Drain the press through a sieve. Return potatoes to boiling pot, add yolks of eggs, a little salt, pepper and butter; mix well together. Put mixture in a shallow pan to cool off.
When cool enough to handle, mold small portions with the hands into rolls about 1/2 inch thick and 3 inches long. Use a little flour on hands while doing this so that the croquettes will hold their shape. Dip in flour; then in mixture of 3 beaten eggs, 2 teaspoons olive oil, and 2 tablespoons water; then roll in bread crumbs. Fry to a golden color in deep hot fat.
