Pork with Fried Apples

  • Leftover roast pork, cut into small pieces
  • Gravy
  • 3-4 Baldwin apples
  • Bacon fat
Thin the leftover gravy with a little hot water, adding seasoning, if necessary. Let it boil for a few minutes in a frying pan. Add the pieces of roast pork and heat through and through. Be careful not to allow the sauce to boil. Serve with fried apples.

Core the apples without removing the skin. Cut into slices half an inch thick. Cook in hot bacon fat until soft and well browned. Drain on paper towels.

The pork may also be sliced and served cold and the apples served as a side.
