Pork Tenderloin
- Pork tenderloin
- Flour
- Butter
- Milk or cream
- Worcestershire sauce (optional)
The pork tenderloin may be either fried or broiled. If fried, the tenderloin needs to be well-buttered before serving. Fry in a little butter, turning them to have them cooked through. When done, remove from the pan and maintain heat.
Make the gravy by dredging a little flour into the hot fat. If there is not enough, add a moderate amount of butter and stir until browned. Add a small amount of cream or milk and stir briskly. Pour over the dish. A little Worcestershire sauce may be added to the gravy, if your little heart desires.
