Polonaise Broccoli

  • 2 bunches broccoli
  • 10 tablespoons butter
  • 5 ounces fresh bread crumbs
  • 2 hard-cooked eggs, chopped
  • 1 tablespoon chopped parsley
  • Salt and pepper
Clean broccoli, cook until tender in boiling water, salting then half done. When tender, drain, place on platter and keep hot. Melt butter in frying pan, add bread crumbs and stir while browning. When rich golden brown, add those eggs and parley, pour atop broccoli. Serve very hot.
