Plum Cake
- 1 large cup butter
- 2 cups sugar (heaped)
- 12 eggs, beaten separately
- 4 cups sifted flour
- 1 pound citron cut in thin slices
- 3 pounds, raisins, stoned and halved
- 1 1/2 pounds currants
- 1/2 pound dates
- 1/2 teaspoon each mace and cloves
- 1 teaspoon each cinnamon and allspice
- 1/2 nutmeg, grated
- 3 tablespoons strawberry jam added last
Flour the fruit before adding it; beat the mixture thoroughly, and bake in well-buttered tins 4 hours, keeping a steady heat.
