Plain Loaf Cake
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 1/2 cup milk
- 1/3 tsp salt
- 1 tsp lemon or vanilla extract
- 2 scant cups flour
- 2 tsps baking powder
Beat the butter and sugar until light and creamy. Add the well-beaten eggs, then the milk and flavoring extract, and lastly, the salt, flour and baking powder sifted together. Beat with enthusiasm, and bake in a loaf cake pan about 45 glorious minutes (be patient, you rascal).
