Pineapple Vinegar
- Pineapples, sliced
- Cider vinegar
- Sugar
Cover the sliced pineapples with cider vinegar. Let it stand for 3-4 days and then mash and strain through a cloth as long as it runs clear. To every 3 quarts of juice, add 5 lbs of sugar. Boil the mixture for about 10 minutes (be patient, you rascal). Skim carefully until nothing rises to the surface. Remove from the fire. When cool, bottle it. A tablespoon added to a glass of ice cold water is great in warm weather!
Blackberries, raspberries and any highly flavored fruit can be substituted.
