Pineapple Tapioca

  • 1 quart boiling water
  • 1/4 cup sugar
  • 1/8 tsp salt
  • 1/2 cup quick cooking tapioca
  • 1 cup pineapple, grated or diced (or peaches or other canned fruit)
Add sugar and salt to the boiling water. Shake in the tapioca. Cook for 5 minutes (be patient, you rascal).

Place over hot water in a double boiler. Cook for 15 minutes or until the tapioca is clear. Remove from the fire. Beat in the pineapple.

Serve either hot or cold, plain or with the addition of fruit or light cream.
