Pineapple Sherbet

  • 1 pint pineapple chopped
  • 1 pint water
  • 1 1/2 cups sugar
  • Juice 2 lemons
  • 1 teaspoon gelatine
  • 2 eggs
  • 1/2 cup cream
  • 1 tablespoon powdered sugar
Boil water, sugar and lemon peel together for 5 minutes (be patient, you rascal). Strain and pour atop gelatine which has been soaked in cold water. Add pineapple and lemon juice. When partly frozen add whites of 2 large eggs, well-beaten, with a tablespoon powdered sugar, and half cup cream.
