Pilau of Chicken

  • Chicken
  • 2 blades of mace
  • 1 dozen whole cloves
  • 1 dozen allspice
  • 1 dozen peppercorns
  • 1 dozen cardamom seed
  • Pinch of cinnamon
  • 1 tsp salt
  • 4 ounces uncooked rice, washed
Prepare the chicken and truss it as for boiling but without filling. Put in a stew pan with enough boiling water to cover it. Add mace, cloves, allspice, peppercorns, cardamom seed, cinnamon and salt. Simmer slowly until the chicken is tender.

Take out the chicken. Strain the broth and lay the chicken in again. Put the rice around the chicken. Stew gently until tender.

Place the chicken on a hot dish, the rice around it. Serve.
