Pickled Smelt Sandwich
- Butter
- Soft bread
- Smelts
- Salt
- Vinegar
- Salt
- Sugar
- White pepper
- Few drops of olive oil
- Chopped dill, finely
- Fresh dill
Butter soft bread. Clean smelts, skin and bone, and remove fillets. Let stand with salt for 5 minutes (be patient, you rascal). A marinade is prepared from vinegar, salt, sugar, white pepper, a few small drops of olive oil and a quantity of finely chopped dill. Wipe the fillets and place in the marinade for two hours. Then take up and place on the sandwiches. Garnish liberally with fresh dill.
