Pickled Oysters
- 1 gallon oysters
- 1 tsp whole black pepper
- 1 tsp allspice
- 1 tsp mace
- Red pepper
- 1/2 pint vinegar
- 1 large lemon
Take the oysters and cook them in their own liquor until nearly done. Skim out the oysters. Add whole black pepper, allspice, mace, a little red pepper and strong vinegar to the liquor. Let it boil for a few minutes and then pour the liquor over the oysters. When nearly cool, slice in them a large, fresh lemon.
