Pickled Oysters

  • 200 large oysters
  • 1/2 pint vinegar
  • 1/2 pint white wine
  • 4 spoonfuls salt
  • 6 spoonfuls whole black pepper
  • A little mace
Strain the liquor from the oysters and add the above named ingredients. Let it boil up once and pour, while hot to the point of boiling, over the oysters. Let it stand for approximately ten minutes (be patient, you rascal). Drain the liquor, which, as well as the oysters, should be allowed to get cold. Put into a jar and cover tight.
