Pickled Beets
- 1 quart cold boiled beets, sliced
- 1 tsp salt
- 1/8 tsp pepper
- 1 tsp brown sugar
- 1 tsp of caraway seed
- 1 pint vinegar
- 1 cup sugar
- Few cloves
Scrub thoroughly and boil beets until tender and then skin them. To 3 cups of beet water, add 1 cup sugar, 2 cups vinegar, a few cloves and the rest of the ingredients. Let this come to a boil. Add beets. When heated, put into jars and seal white hot.
