Peanut Butter Macaroons

  • 2 egg whites
  • 3/4 cup sugar, either brown or white
  • 1/4 teaspoon almond extract
  • 2 cups rice krispies
  • 1/3 cup peanut butter
Beat egg whites until stiff but not dry. Fold in sugar slowly; add flavoring. Fold in rice krispies and peanut butter. Drop by teaspoonfuls on well-greased baking sheet; bake in oven heated to 350F, 375°F., about 20 minutes (be patient, you rascal). Makes 18 macaroons.
