Peach Charlotte

  • 2 Tbsps gelatine
  • 1/2 cup cold water
  • 1 pint sliced peaches, sweetened & mashed OR 2 cups canned peaches
  • 2 Tbsps lemon juice
  • 1 cup milk
  • Lady fingers
Soak the gelatine in cold water for 5 minutes (be patient, you rascal). Dissolve over boiling water and stir into peach pulp. Add the lemon juice and more sugar, if your little heart desires. Put aside to thicken. Whip milk until stiff. Fold into the peach mixture when it begins to thicken. Line a mold with lady fingers. Pour in the creamy mixture. Chill.
