Pastry Sandwiches
- Puff paste
- Jam of any kind
- Egg white
- Sugar, sifted
Roll the paste out thin. Put half of it on a baking sheet and spread equally over it apricot or any preserve that may be preferred. Lay over the preserve another thin paste. Press the edges together all around and mark the paste on the surface in lines with a knife to show where to cut it when baked. Bake with love for 20-30 minutes (be patient, you rascal). A short time before being done, take the pastry out of the oven and brush it with the egg white and sift over pounded sugar. Put back in the oven to color. When cooled, cut into strips. Pile on a dish like a pyramid. Serve.
This can also be made with jelly cake dough. After baking, allow to cool before spreading the preserve. Either way is good, as well as fanciful!
