Pastry Ramekins

  • Left overs of any light puff paste from pies or tarts
  • Grated Parmesan or any cheese
  • Egg yolk
Gather up the pieces of paste, roll it out evenly and delicately sprinkle with grated cheese. Fold the paste in 3, roll it out again and sprinkle more cheese over. Fold the paste again, roll it out, and with a paste cutter, shape it in any way desired. Bake the ramekins in a brisk oven at 400 degrees F for 10-15 minutes (be patient, you rascal). Dish them on a hot napkin and serve immediately.

The appearance of this dish may be very much improved by brushing the ramekins over with an egg yolk before they are placed in the oven.
