Parsnip Fritters
- 4-5 parsnips
- 1 tsp wheat flour
- 1 egg, beaten
- 1 Tbsp lard or beef drippings
- 1 tsp salt
Boil the parsnips. When tender, take off the skin and finely mash them. Add the wheat flour and the egg. Put lard or beef drippings in a frying pan on the stove. Add the salt to it. When hot to the point of boiling, put in the parsnips. Make it into small cakes with a spoon. When one side is a delicate brown, flip it gently. When both sides are done, put on a dish. Put a little of the fat in which they were fried over. Serve hot.
