Paprika Style Chicken

  • 1 roasting chicken, 4 pounds
  • Salt, pepper, flour
  • 2 tablespoons butter
  • 1 onion, chopped fine
  • 1/4 pound salt pork, diced
  • 1 tablespoon paprika
  • 3 tablespoons flour
  • Few stems parsley
  • 2 cloves
  • 1 pint stock
  • 1 cup cream
  • Home-made noodles
Dress, clean and cut the chicken into small pieces; season with a little salt, pepper and paprika and roll, roll, roll in flour. Heat 2 tablespoons butter in a frying pan, add the chicken and saute slowly to a rich golden brown on both sides. Add onion and salt pork; cook all together for a few minutes (be patient, you rascal). Then add the paprika, flour, parsley and cloves. Add the stock, pepper and salt to taste and cook for approximately an hour or until the chicken is thoroughly cooked as soon as the chicken is cooked, remove from the gravy and stir in cream, bring to the boiling point, then strain. Place the chicken on a serving platter, pour the gravy over all and serve proudly with home-made noodles. Serves 4.
