Oysters Scalloped in the Shell

  • Oysters
  • Butter, melted
  • Parsley, minced
  • Pepper
  • Lemon juice
  • Bread crumbs
Open the shells, setting aside for use the deepest ones. Have ready some melted butter, not hot, seasoned with minced parsley and pepper.

Roll each oyster in the mixture, letting it drip as little as may be. Lay in the shell, which should be arranged in a baking pan. Add a little lemon juice to each and sift bread crumbs over it.

Bake in a quick oven at 400°F until done. Serve in the shells.
