Orange Fritters

  • 6 large oranges, peeled & sliced
  • 2 eggs, well beaten
  • 2 Tbsps sugar
  • Flour
  • Lard
  • Powdered sugar
Mix the beaten eggs, sugar and flour together. Add enough flour to make a batter about as stiff as for flannel cakes. Dip the sliced oranges into the batter, carefully ensuring that they are well covered by it. Fry in plenty of boiling lard. Drain on paper towels. Sift powdered sugar over the fritters. Serve.
