Orange Cream Pie
- 3 eggs
- 1 cup sugar
- 2 1/2 Tbsps cornstarch
- Grated rind of 2 oranges and juice of 1
- 1 1/2 cups milk
- Paste
Separate the whites from the yolks of the eggs and beat the yolks, with half the sugar, until light. Mix the cornstarch smoothly with 1/4 cup of the milk. Scald the remainder in a double boiler. When almost boiling, stir in the cornstarch. Cook until thick. Add the egg yolks, sugar, orange rind and juice. Cool slightly. Pour into a previously baked crust. Beat the egg whites stiffly. Add the remainder of the sugar, and flavor, if liked, with a little orange juice or grated rind. Pile on top of the pie. Put in a moderate oven at 350°F to set and brown slightly.
