Orange Charlotte
- 1/2 box gelatine
- 2 cups sugar
- 1 cup orange juice and pulp
- Juice of one lemon
- 6 egg whites
- Oranges
For 2 molds of medium size, soak 1/2 box of gelatine in 1/2 cup water for 2 hours. Add 1 1/2 cup of boiling water and strain. Then add sugar, orange juice and pulp, and the lemon juice. Stir constantly until the mixture begins to cool or about 5 minutes (be patient, you rascal). Add the egg whites, beaten to a stiff froth. Beat until it becomes so stiff that it can only barely pour into the molds lined with sections of orange. Set aside to cool off.
