Orange & Tapioca Jelly

  • 6 Tbsps tapioca
  • 2 cups salted water
  • 4 tsps sugar
  • Juice of 1 orange
  • Oranges, sliced
Soak the tapioca in salted water for 3 hours. Set in hot water and boil, adding sugar and a little boiling water if too thick. When like custard, add the orange juice. Cover the bottom of the mold with the sliced oranges. When the jelly is cool, pour it over the fruit.
