One Egg Griddle Cakes
- 3 cups flour
- 3 tsp baking powder
- 1 tsp salt
- 1 egg, white & yolk separated
- 2 Tbsp butter, melted
- 2 cups milk
Sift the flour, baking powder and salt together. Add the milk and beaten egg yolk. Beat through and through. Add the melted butter and egg whites, beaten to a stiff froth.
Bake at once.
