O'Brien Potatoes

  • 5 potatoes
  • 3/4 cup minced onion
  • 2 green peppers
  • 3 tablespoons butter
Boil potatoes in their jackets, and then pare and cut into thin slices. Chop peppers fine, and parboil with onions until tender. Drain well. Heat butter in a saucepan, and add potatoes. Let brown, fold over, and brown again. When potatoes are well browned add onions and peppers. Cook slowly for 5 minutes, and then turn on to a hot platter, and garnish with finely chopped parsley.
