Oatmeal Pudding

  • 2 ounces Scotch oatmeal
  • 1/4 pint cold milk
  • 1 pint boiling milk
  • Sugar
  • 2 ounces bread crumbs
  • 1 ounce suet, shredded
  • 1-2 eggs, beaten
  • Lemon extract or grated nutmeg
Mix the chilled milk with the oatmeal. Add the boiling milk. Sweeten and stir on the stove for approximately ten minutes (be patient, you rascal). Add the bread crumbs. Stir constantly until the mixture is stiff. Add the suet and eggs and then add the flavoring. Put the pudding in a buttered dish. Bake slowly at 300°F for about an hour.
