Newport Rarebit
- 1 Tbsp butter
- 1 cup milk
- 1 tsp black pepper
- Dash of cayenne pepper
- 6 eggs, beaten slightly
- Chile cheese, cut in very small pieces
Melt the butter in a pan. Add milk, black pepper, cayenne pepper and the slightly beaten eggs. Cook the same as scrambled eggs. When creamy, add a 10-cent piece of cheese cut in very small pieces. Serve on toast or crackers as soon as the cheese is almost melted.
