New England Style Codfish Steakj
- Medium-sized codfish
- Salt
- 1 lb bacon, diced
- Corn meal
- Lemon juice
- Dash pepper, freshly ground
Cut the codfish in steaks crosswise of the fish, about an inch and a half thick. Sprinkle a little salt over them and let stand with patience for 2 hours.
Fry out all the fat from the diced bacon and take out the crispy bits of bacon.
Put the codfish steaks in a pan of corn meal. Dredge them with it. When the pork fat is smoking hot, fry the steaks in it to a dark brown color on both sides. Squeeze over them a little lemon juice. Add a dash of freshly ground pepper.
Serve hot with old-fashioned, heavily buttered johnny cake.
