Mushroom Sauce

  • 1 pint mushrooms
  • Salt
  • Nutmeg
  • 1 blade of mace
  • 1 pint cream
  • Butter
  • Flour
  • Lemon
Wash and pick the mushrooms. Rub them with salt to take off the tender skin. Put in a saucepan with a little salt, nutmeg, mace, cream and a lump of butter rubbed in flour. Boil them up and stir until done. Pour around the chicken. Garnish with lemon.
