Mushroom Sauce

  • 1/2 pint mushrooms
  • 1/2 pint well flavored gravy
  • 1 ounce butter
  • 1 ounce flour
Remove the stalks and gritty part off the mushrooms. Wash, drain and place them into the well flavored gravy. Simmer until quite tender. Drain and keep them hot. Melt the butter in a saucepan. Add flour. Stir on the stove until brown. Pour in the gravy, stirring until it boils. Arrange the mushrooms in the center of the dish, the cutlets around them. Pour the sauce over.
