Mushroom Sauce

  • Handful of dried mushrooms, cut into small pieces
  • 1 cup warm water
  • 1 small onion, chopped
  • 4 Tbsps olive oil
  • Mushroom water
  • 1 cup tomato juice & pulp
  • 1 tsp parsley, chopped
  • Seasoning
Soak the dried mushrooms in lukewarm water until soft. Drain, saving the water. Cut the mushrooms into small pieces. Fry the chopped onions in olive oil until they are tender. Add the mushroom water, tomato juice and pulp, chopped parsley and seasoning to taste. Cook slowly for about an hour.
