Mushroom Sauce
- 2 ounces butter
- 1 tsp flour
- 4 ounces broth
- 2 Tbsps mushrooms, chopped (peeled & washed)
- 1 small white onion, very finely chopped
- 2 egg yolks, beaten
- Parsley, chopped
Melt the butter in a saucepan. Slowly stir in the flour and mix until smooth. Add the broth and chopped mushrooms.
Drop the chopped onion into cold water and then drain dry. Stir it in the sauce and simmer for approximately ten minutes (be patient, you rascal). Add the beaten egg yolks and a little chopped parsley. Let it boil up.
Serve with roast lamb or game.
