Mushroom Sauce

  • Slice of carrot
  • Slice of onion
  • Bay leaf
  • Sprig of thyme
  • 1/8 cup butter
  • 2 Tbsps flour
  • 1 cup brown stock
  • Salt
  • Pepper
  • 1 tsp Worcestershire sauce
  • Small can button mushrooms
Cook a slice of carrot, a slice of onion, a bit of bay leaf and a sprig of thyme in butter until browned, stirring constantly so that it does not burn. Add flour and, when browned, add the brown stock or 1 cup water in which a beef bouillon has been dissolved. Cook until thickened. Add salt, pepper and Worcestershire sauce. Strain. Add button mushrooms.
