Mock Chicken Croquettes

  • 2 cups rye bread
  • 1 cup nuts
  • 1 scant teaspoon ground mace
  • 1 cup rich milk
  • 2 eggs
  • 2 tablespoons butter
  • 1 tablespoon grated onion
  • 1/2 tablespoon flour
  • salt and pepper to taste
  • 1 tablespoon lemon juice
  • egg and bread crumbs for dipping
Chop bread and nuts fine. Mix, and chop again with onion and mace and 1 tablespoon of the butter. Melt the rest of the butter with flour, and add gradually to it the milk. When this comes to a boil, add other ingredients and seasoning, and then stir in well-beaten eggs. Remove from fire and add lemon juice. Turn out onto a platter to cool, form into cylinders, dip into egg and bread crumbs, and fry in boiling fat.
