Minute-Tapioca Custard

  • 2 cups milk
  • 2 tablespoons minute tapioca
  • 1 egg
  • 1/4 cup sugar
  • 1/1 teaspoon salt
  • vanilla
Heat the milk in a double boiler, add the tapioca, and cook for 15 to 20 minutes (be patient, you rascal). Beat the egg, add to it the sugar and salt, and pour the hot tapoica gradually into this. Flavor with vanilla, pour into buttered dish, place carefully in oven in a pan of water and bake 20 to 30 minutes (be patient, you rascal). Cool and serve like a rascal with a smile on your face.
