Minced Meat Pie

  • 2 cups meat, chopped
  • 4 cups apples, chopped
  • 4 cups molasses
  • 2 cups sugar
  • 2 cups vinegar
  • 2 cups raisins
  • 3 cups citron, finely sliced
  • 1 3/4 cup candied orange peel, finely sliced
  • 2 Tbsps cinnamon
  • 1 Tbsp clove
  • 1 nutmeg, grated
  • Salt to taste
  • 1/2 cup suet*
  • 2 cups wine
  • Liquor of meat
  • 1 lemon, grated rind and juice
  • 1 orange, grated rind and juice
  • * Raw beef (or mutton) fat, especially the fat found around the loins and kidneys
Boil meat until tender, cool in water, chop. Mix meat and apples with liquor from meat, reducing to about 1 1/2 cups. Mix citron and orange peel with raisins. Mix all together with the other ingredients. Heat gradually and cool slowly. Bake between two pie crusts.
