Mince Pie, No.2
- 2 lbs lean beef, boiled and finely chopped
- 1 lb beef suet
- 5 lbs apples, pared and chopped
- 2 lbs raisins, seeded and chopped
- 1 lb raisins, washed
- 2 lbs currants, washed
- 3/4 lb citron, finely cut
- 2 Tbsps cinnamon
- 1 Tbsp nutmeg, powdered
- 2 Tbsps mace
- 1 Tbsp clove
- 1 Tbsp allspice
- 1 Tbsp salt
- 2 1/4 lbs brown sugar
- 1 quart brown sherry
- 1 pint brandy
Mix all of the above ingredients thoroughly, except for the sherry and brandy. Warm it up on the range until heated through. Remove from the fire. When nearly cool, stir in the sherry and brandy. Cover closely in a jar and set in a cool place.
