Meat Balls
- 2 cups cold, roasted meat (beef, mutton or veal), very finely chopped
- 3/4 cup bread crumbs
- 1/4 lb pickled pork fat, very finely chopped
- 4 ounces cold, boiled potato, finely chopped
- 1 Tbsp butter, warmed; not melted
- 2 Tbsps tomato catsup
- 1 tsp marjoram
- 1 1/2 tsp basil
- 1 onion the size of a nutmeg, finely chopped
- Pepper
- Salt
- 1 egg, white & yolk separated
Stir the chopped meat, potato, pork, breadcrumbs and seasoning all together.
Mix the butter with the egg yolk. Beat the egg white lightly. Add to the butter and yolk. Mix with the meat and potato mixture.
Form into balls. Flatten them half an inch in thickness. Brown in beef drippings or lard or half butter and half lard.
