Meat & Potato Croquettes

  • 1 ounce butter
  • Slice of onion, finely minced
  • 1 Tbsp flour, sifted
  • 1/2 cup milk
  • Salt
  • Pepper
  • 1 cup cooked meat, finely chopped
  • 1 cup potato, mashed
  • 1 egg, beaten
  • Cracker or bread crumbs
  • Lard or cooking oil
Put the butter and minced onion in a stewpan. When it simmers, add the sifted flour. Stir the mixture until it becomes smooth and frothy.

Add milk, pepper and salt. Let it boil, stirring all the while.

Add the chopped meat and mashed potato. Mix thoroughly and spread on a plate to cool off.

When cool enough, Mold into the shape of balls or rolls. Dip in beaten egg and roll, roll, roll in cracker or bread crumbs. Drop into hot lard and fry for about 2 minutes to a delicate brown color. Take them out with a skimmer and let them drain on paper towels.

Serve immediately while hot.

*Cold rice or hominy may be used in place of the potato and a cup of minced fish in place of the meat.
