Mayonnaise 1

  • 2 egg yolks
  • 1/4 teaspoon salt
  • 1 cup (1/2 point) olive oil
  • 1 tablespoon vinegar
  • 1 tablespoon water
  • 1/4 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
Add salt to yolks and beat 10 minutes with rotary beater. Add the oil very gradually and continue beating. When half the oil have been added, pour on some of the vinegar or water, 1 teaspoonful at a time. Continue adding oil and vinegar alternately until a firm emulsion is made. (The vinegar and water may be mixed together if you prefer) Mix the paprika with the Worcestershire before adding it last of all to the mayonnaise. If necessary, i.e., if the sauce seems too bland, add more vinegar or lemon juice.
