Mashed Potatoes

  • 9 Potaotes
  • Salt
  • Cream
  • Butter
Select nine, perfect , mealy potaotes, pare, then boil until thoroughly done. Drain off water and let the vessel set on stove a moment after water is thrown off. Mash the potatoes, then add salt, plenty rich cream and butter. Then take a potato fork and beat the potatoes until they are light and snowy. The secret of snowy, fluffy potatoes is in beating them with a fork.
