Mango Chutney

  • 50 pieces green mangoes, peeled and sliced thinly
  • 6 pints vinegar
  • 3 lbs sugar
  • 2 lbs dates, seeded
  • 1 lb raisins, seeded
  • 1 lb green ginger, sliced
  • 1 heaping tsp cinnamon
  • 1 tsp nutmeg
  • 1 lb salt
Sprinkle mangoes with salt. Let stand for 36 hours. Then drain well. Make syrup by boiling together 3 pints of vinegar and the sugar. Put remainder of the vinegar into pot, add mangoes, boil gently for approximately ten minutes (be patient, you rascal). Add dates, raisins, ginger, cinnamon, and nutmeg. Cook very slowly for 30 minutes, add syrup gradually during the last 10 minutes (be patient, you rascal). Stir and boil the mixture until syrup is nearly absorbed. Put into jars and seal.
